Luscious Lemon-Lime Cherry Pistachio Cheesecake 🍒🍋

Ingredients:

For the Crust:

1 1/2 cups crushed pistachios

1/4 cup granulated sugar

1/4 cup unsalted butter, melted

For the Cheesecake Filling:

3 packages (8 oz each) cream cheese, softened

1 cup granulated sugar

1/4 cup sour cream

3 large eggs

2 tbsp lemon juice

1 tbsp lime juice

1 tsp vanilla extract

1/2 cup heavy cream

For the Topping:

1 cup fresh cherries, pitted and halved 🍒

1 tbsp lemon juice

1 tbsp lime juice

2 tbsp honey

1/4 cup chopped pistachios for garnish

Instructions:

Preheat your oven to 325°F (163°C).

For the crust: In a food processor, pulse the crushed pistachios, sugar, and melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan to form a crust.

Bake the crust in the preheated oven for 10 minutes, then remove and set aside to cool.

For the cheesecake filling: In a large bowl, beat the softened cream cheese and sugar until smooth and creamy.

Add the sour cream, lemon juice, lime juice, and vanilla extract to the cream cheese mixture, mixing until well combined.

Add the eggs one at a time, beating well after each addition.

Pour the cheesecake batter into the cooled pistachio crust, smoothing the top.

Bake for 50-60 minutes, or until the edges are set and the center slightly jiggles.

Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour. Then, refrigerate the cheesecake for at least 4 hours or overnight.

For the topping: In a small saucepan, combine the cherries, lemon juice, lime juice, and honey. Cook over medium heat for 5-7 minutes until the cherries release their juices and the mixture thickens slightly.

Let the cherry mixture cool to room temperature.

Once the cheesecake is chilled, pour the cherry topping over the cheesecake and sprinkle with chopped pistachios for garnish.

Slice and serve chilled.
