Crispy Roasted Broccolini:
1 bunch (about 12 oz) broccolini, trimmed
2 tbsp olive oil
3 cloves garlic, thinly sliced
Salt & freshly cracked black pepper to taste

2 tbsp unsalted butter
3 cloves garlic, minced
1 ½ cups heavy cream
1 cup grated Parmesan cheese
Salt & freshly cracked black pepper to taste
Creamy Twist: Zesty Lemon Whipped Feta:
4 oz block feta cheese, crumbled
¼ cup plain Greek yogurt (full-fat recommended for creaminess)
2 tbsp fresh lemon juice
1 tsp lemon zest
1 tbsp olive oil
Twist & Garnish: Lemon Hot Honey & Toasted Pine Nuts:
2 tbsp pine nuts
3 tbsp honey
1 tbsp fresh lemon juice
1-2 tsp hot sauce (adjust to desired spice level)
Instructions:
Prepare Crispy Roasted Broccolini:
Preheat oven to 200°C (400°F). Line a large baking sheet with parchment paper.
In a large bowl, toss broccolini with 2 tbsp olive oil, thinly sliced garlic, salt, and pepper.
Spread in a single layer on the prepared baking sheet and roast for 15-20 minutes, or until tender-crisp and lightly charred.
Prepare Garlic-Herb Greek Chicken:
While broccolini roasts, in a bowl, toss chicken with 2 tbsp olive oil, 4 cloves minced garlic, Greek seasoning, salt, and pepper. Let marinate for at least 15 minutes.
Heat a grill pan or large skillet over medium-high heat. Add chicken and cook for 5-7 minutes (for bites) or 2-3 minutes per side (for cutlets), stirring/flipping occasionally, until cooked through and nicely browned. Set aside.
Prepare Zesty Lemon Whipped Feta:
In a food processor or with an immersion blender, combine the crumbled feta cheese, plain Greek yogurt, 2 tbsp fresh lemon juice, lemon zest, and 1 tbsp olive oil.
Process until completely smooth and creamy, scraping down the sides as needed. This may take 2-3 minutes. Set aside.
Prepare Creamy Alfredo Sauce:
In a large skillet or saucepan, melt 2 tbsp unsalted butter over medium heat.
Add 3 cloves minced garlic and sauté for 30 seconds until fragrant.
Pour in 1 ½ cups heavy cream and bring to a gentle simmer, stirring occasionally.
Gradually stir in 1 cup grated Parmesan cheese until melted and the sauce is smooth and creamy. Season with salt and freshly cracked black pepper. Keep warm over very low heat.
Toast Pine Nuts & Make Lemon Hot Honey:
In a small dry skillet over medium-low heat, add pine nuts. Toast for 2-4 minutes, stirring frequently, until lightly golden and fragrant. Watch carefully as they burn quickly. Remove from heat immediately.
In a small bowl, whisk together 3 tbsp honey, 1 tbsp fresh lemon juice, and 1-2 tsp hot sauce.
Assemble the Bowl:
Add the cooked garlic-herb Greek chicken to the creamy Alfredo sauce and gently stir to coat.
Now, take spoonfuls of the prepared Zesty Lemon Whipped Feta and artfully dollop it into the Alfredo sauce. Gently swirl it in with a spoon, leaving distinct streaks (don’t fully mix).
Divide the crispy roasted broccolini among plates or bowls.
Spoon the cheesy, luscious Creamy Greek Chicken Alfredo mixture with the lemon whipped feta swirls generously over the broccolini.
Finish by generously drizzling the lemon hot honey over the entire dish.
Finally, sprinkle with the toasted pine nuts.
Serve immediately and prepare for an extraordinary, fresh, and incredibly satisfying meal!
Tips for Success:
Feta Whip: Ensure your feta and Greek yogurt are at room temperature for the smoothest whip.
Broccolini Roasting: Don’t overcrowd the baking sheet for the broccolini to ensure it gets crispy, not soggy.
Pine Nuts: Keep a very close eye on pine nuts when toasting; they can go from golden to burnt in seconds.
Chicken Doneness: Avoid overcooking the chicken to keep it juicy and tender.
Sauce Consistency: If the Alfredo sauce seems too thick, you can thin it with a splash of warm chicken broth or milk.
Lemon Hot Honey: Adjust the amount of hot sauce to your preferred level of spice.
Enjoy this exquisite and satisfying dish!
