Chocolate Covered Strawberry Cookies 🍓🍫
Ingredients:
- 1 cup unsalted butter, softened
- 1 cup sugar
- 1 cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup fresh strawberries, diced
- 1 cup semi-sweet chocolate chips
- 1/2 cup white chocolate chips (for drizzling)

Instructions:
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large mixing bowl, cream together the softened butter, sugar, and brown sugar until smooth and fluffy.
- Add the eggs one at a time, mixing well after each addition, followed by the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Gently fold in the diced strawberries and semi-sweet chocolate chips with a spatula, ensuring they are evenly distributed throughout the dough.
- Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden and the centers appear set.
- Remove from the oven and allow the cookies to cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.
- While the cookies are cooling, melt the white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth.
- Once the cookies have cooled completely, drizzle the melted white chocolate over the cookies using a fork or a piping bag for precision.
- Allow the white chocolate to set before serving.
