Tater Tot Breakfast Bowl with Sausage Gravy

Ingredients:

½ tsp salt
¼ tsp black pepper
1 tbsp butter
1 bag (32 oz) frozen tater tots
6 large eggs
½ cup shredded cheddar cheese
For the Sausage Gravy:
1 lb breakfast sausage (mild or spicy)
2 tbsp unsalted butter
¼ cup all-purpose flour
2 cups whole milk
½ tsp salt (adjust to taste)
½ tsp black pepper
¼ tsp garlic powder (optional)
¼ tsp cayenne pepper (optional, for heat)

Directions:

  1. Bake the Tater Tots:
    Preheat the oven to 425°F (220°C).
    Spread the tater tots on a baking sheet and bake according to package instructions until golden and crispy (about 25 minutes).
  2. Cook the Scrambled Eggs:
    In a bowl, whisk eggs with salt and black pepper.
    Heat butter in a skillet over medium heat. Pour in the eggs and cook, stirring gently, until soft and fluffy. Set aside.
  3. Make the Sausage Gravy:
    In a large skillet over medium heat, cook the breakfast sausage, breaking it up into crumbles until fully browned.
    Add butter and stir until melted.
    Sprinkle flour over the sausage and stir, cooking for 1-2 minutes until the flour is absorbed.
    Slowly pour in the milk, stirring constantly to prevent lumps.
    Add salt, black pepper, garlic powder, and cayenne (if using). Simmer for 5-7 minutes until thickened. Adjust seasoning if needed.
  4. Assemble the Bowls:
    Divide crispy tater tots into bowls.
    Top with scrambled eggs.
    Pour a generous amount of sausage gravy over everything.
    Sprinkle with shredded cheddar cheese.
  5. Serve & Enjoy!
    Garnish with chopped green onions or parsley if desired.
    Serve immediately with hot sauce or ketchup on the side.
