📝 Ingredients:

2 bone-in, skin-on chicken legs
2 cups baby potatoes, halved
1 cup carrots, chopped
1 cup green beans, trimmed
½ onion, diced
2 tbsp olive oil
2 tsp garlic powder
1 tsp paprika
1 tsp dried thyme (or fresh sprigs)
½ tsp black pepper
½ tsp sea salt
🍽️ Step by Step:

1️⃣ Preheat & Prep:

Preheat the oven to 400°F (200°C).
Line a baking tray with parchment paper or lightly grease it.
2️⃣ Season the Chicken:

Pat the chicken dry and rub with 1 tbsp olive oil.
Sprinkle with garlic powder, paprika, salt, and pepper.
3️⃣ Prepare the Vegetables:

Toss potatoes, carrots, green beans, and onion with the remaining olive oil.
Season with salt, pepper, and thyme.
