Ingredients :
- 250 ml of thick sour cream
- 1 tablespoon of honey (optional)
- 1 clove of garlic, minced
- 1 tablespoon of butter
- 1 pork fillet mignon (approximately 700 g)
- 150 ml of poultry broth or water
- 3 tablespoons of old-fashioned mustard
- 1 teaspoon of sweet paprika
- 1 tablespoon of vegetable oil
- Salt and pepper.
- Fresh parsley for decoration
Instructions :
- Prepare the fillet mignon by cutting it into slices about 3-4 cm thick. Heat oil and butter in a skillet over medium heat and brown the meat pieces for 3 minutes on each side. Save them on a plate.
- In the same pan, add minced garlic and stir quickly until golden brown. Then incorporate the old-fashioned mustard and poultry broth, mixing well.
- Add sour cream, paprika and a pinch of salt and pepper. If you like a sweet note, feel free to incorporate a spoonful of honey to soften the sauce.
- Put the filet mignon chunks back in the pan. Cover and let simmer over low heat for 15 minutes, stirring occasionally to allow sauce to coat meat well.
