Creamy Garlic Mushroom & Spinach Chicken
Ingredients:
- 4 boneless, skinless chicken thighs (or breasts)
- 1 tablespoon avocado oil (or olive oil)
- 2 tablespoons unsalted butter
- 4 garlic cloves, minced
- 1 cup cremini or button mushrooms, sliced
- 2 cups fresh baby spinach
- ¾ cup heavy cream
- ½ cup vegetable or chicken broth
- ¼ cup freshly grated Pecorino Romano (or Parmesan) cheese
- 1 teaspoon dried thyme (or Italian seasoning)
- Salt and freshly ground black pepper to taste
- Optional: crispy prosciutto or bacon bits for garnish

Instructions:
- Season the Chicken:
- Season the chicken thighs (or breasts) with salt, pepper, and a pinch of thyme.
- Cook the Chicken:
- Heat avocado oil in a large skillet over medium heat. Cook the chicken for 5-6 minutes per side (depending on thickness) until golden brown and cooked through. Once done, remove the chicken and set aside to rest.
- Prepare the Garlic and Mushrooms:
- In the same skillet, melt the butter over medium heat. Add minced garlic and sliced mushrooms, cooking for 3-4 minutes until fragrant and softened.
- Make the Creamy Sauce:
- Pour in the chicken broth and heavy cream. Stir in the grated Pecorino Romano cheese and thyme, letting the sauce simmer for 4-5 minutes until it thickens slightly.
- Add Spinach:
- Stir in the fresh spinach and cook for another 1-2 minutes until wilted.
- Combine the Chicken and Sauce:
- Return the chicken to the skillet, spooning the creamy sauce over the top. Simmer for an additional 2-3 minutes to allow the flavors to meld together.
- Optional Garnish:
- For a crispy finish, top with pieces of crispy prosciutto or bacon. Serve warm with your favorite sides.
