🥗 Grilled Chicken Mediterranean Bowl with Tzatziki 🍋🔥
A fresh, healthy, and protein-packed bowl bursting with flavor!
📝 Ingredients:
For the Grilled Chicken:
2 boneless, skinless chicken breasts
1 tbsp olive oil
1 tsp garlic powder
1 tsp dried oregano
1/2 tsp smoked paprika
1/2 tsp salt
1/4 tsp black pepper
1 tbsp lemon juice
For the Tzatziki Sauce:
1/2 cup Greek yogurt
1/2 cucumber, grated and squeezed dry
1 clove garlic, minced
1 tbsp lemon juice
1 tbsp fresh dill, chopped
1/4 tsp salt
1/4 tsp black pepper
1/2 tbsp olive oil
For the Bowl:
1 cup cooked basmati or jasmine rice
1/2 cup cherry tomatoes, halved
1/2 cucumber, sliced
1/4 red onion, thinly sliced
1 cup lettuce, chopped
🍽️ Directions:


1️⃣ Marinate & Grill the Chicken:
In a bowl, mix olive oil, garlic powder, oregano, smoked paprika, salt, pepper, and lemon juice.
Coat the chicken evenly and let marinate for 15 minutes (or overnight for deeper flavor).
Heat a grill or pan over medium-high heat and cook for 5-7 minutes per side until golden and fully cooked.
Let the chicken rest for 5 minutes, then slice.


2️⃣ Prepare the Tzatziki Sauce:
In a bowl, mix Greek yogurt, grated cucumber, garlic, lemon juice, dill, salt, black pepper, and olive oil.
Stir well and refrigerate until ready to use.


3️⃣ Assemble the Bowl:
Place cooked rice as a base.
Arrange grilled chicken, cherry tomatoes, cucumber, red onion, and lettuce on top.
Add a generous scoop of tzatziki sauce.


4️⃣ Garnish & Serve:
