Flourless Pistachio Cake with Chocolate Ganache
Ingredients:
1 cup pistachios
1 cup powdered sugar
4 large eggs
1 teaspoon vanilla extract
½ teaspoon baking powder
Pinch of salt
For the Chocolate Ganache:
1 cup dark chocolate chips
½ cup heavy cream
1 tablespoon unsalted butter
Directions:

Preheat the oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.
In a food processor, grind the pistachios into a fine powder.
In a medium bowl, whisk together the powdered sugar, ground pistachios, and baking powder.
In a separate bowl, whisk the eggs, vanilla extract, and a pinch of salt until light and frothy.
Fold the egg mixture into the pistachio mixture until smooth and well combined.
Pour the batter into the prepared cake pan and smooth the top.
Bake for 20-25 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Prepare the ganache: In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer.
Remove from heat and add the dark chocolate chips and unsalted butter. Let it sit for 2-3 minutes, then stir until smooth and glossy.
Once the cake has cooled, pour the ganache over the top, spreading it to the edges.
