Decadent German Chocolate Coconut Pecan Roll Cake
Ingredients:
For the Cake:
1 box of German chocolate cake mix
1/2 cup vegetable oil
3 large eggs
1 cup water
1 tsp vanilla extract
1/2 cup unsweetened cocoa powder
For the Filling:
1 cup sweetened shredded coconut
1 cup chopped pecans
1 cup sweetened condensed milk
1/2 cup unsalted butter
1 tsp vanilla extract
For the Frosting:
1/2 cup unsweetened cocoa powder
1/2 cup heavy cream
1 cup powdered sugar
1/4 cup unsalted butter, softened
1 tsp vanilla extract
Directions:

Preheat the oven to 350°F (175°C) and grease a 10×15-inch jelly roll pan. Line it with parchment paper for easy removal of the cake.
In a large bowl, combine the German chocolate cake mix, vegetable oil, eggs, water, vanilla extract, and cocoa powder. Mix until smooth and well-combined.
Pour the batter into the prepared pan, spreading it evenly. Bake for 15-18 minutes or until a toothpick inserted into the center comes out clean. Once baked, remove the cake from the oven and let it cool for 10 minutes.
While the cake is cooling, prepare the filling. In a medium saucepan, melt the butter over medium heat. Stir in the sweetened condensed milk and vanilla extract. Once the mixture is smooth, fold in the shredded coconut and chopped pecans. Remove from heat and set aside.
Once the cake has cooled enough to handle, invert it onto a clean kitchen towel sprinkled with powdered sugar. Carefully peel away the parchment paper.
Spread the coconut-pecan filling evenly over the surface of the cake. Then, gently roll the cake into a log, starting from one end, using the towel to help lift and roll the cake tightly.
Place the rolled cake seam-side down on a serving platter and refrigerate for 1 hour to set.
For the frosting, in a medium saucepan, whisk together the cocoa powder, heavy cream, powdered sugar, and butter. Cook over medium heat until the mixture is smooth and thickened, about 3-5 minutes.
Remove from heat and stir in the vanilla extract. Allow the frosting to cool slightly before spreading it over the chilled rolled cake.
