Pasted Rainbow Ombre Drip Cake

Ingredients:

  • 2 1/2 teaspoons baking powder
  • 2 1/2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 cup whole milk
  • 3 teaspoons vanilla extract
  • Food coloring in multiple colors
  • 1 cup heavy cream (for drips)
  • Sprinkles (for decoration)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans and set them aside.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. This should take about 4-5 minutes.
  3. Add the eggs, one at a time, mixing well after each addition. Then, stir in the vanilla extract.
  4. In another bowl, combine the all-purpose flour and baking powder. Gradually add this dry mixture to the wet ingredients, alternating with the milk. Begin and end with the flour mixture. Mix until just combined.
  5. Divide the batter evenly into six bowls. Use food coloring to tint each bowl a different shade, creating a gradient effect.
  6. Pour each colored batter into the prepared cake pans, starting with the lightest color for the first layer, followed by the next darker shade, and continue until all layers are in their respective pans.
  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
  8. Once cooled, stack the layers from lightest to darkest, spreading a thin layer of frosting between each. Crumb coat the entire cake to seal in crumbs and let it chill in the fridge for 30 minutes.
  9. While the cake chills, whip the heavy cream until soft peaks form, then prepare your choice of dripping sauce. You can melt chocolate or use a drip bottle filled with colored frosting.
  10. Once chilled, remove the cake from the fridge, drizzle the prepared drips over the edges, allowing it to flow down the sides. Top the cake with cream, add sprinkles, or any desired decorations.
