Whether it’s Valentine’s Day, Mother’s Day or simply as delicious birthday cupcakes – our simple recipe for red velvet cupcakes with buttermilk and cream cheese frosting is suitable for all occasions. 😍✨

INGREDIENTS
FOR THE MUFFINS
75 g soft butter
150 g sugar
1 pinch vanilla extract
2 egg whites (size L)
120 ml buttermilk
180 g flour
3 tsp baking powder
1 tsp cocoa powder
1 pinch salt
Red food coloring (preferably gel or powder food coloring)

FOR THE FROSTING
200 g white chocolate
300 g cream cheese (room temperature)
75 g soft butter

PREPARATION
Step 1
For the muffins, beat the butter with the sugar and vanilla extract for several minutes until creamy. Stir in the egg whites and buttermilk. Mix the flour with the baking powder, cocoa powder and salt and add to the dough. Add red food coloring if desired and mix everything well.

Step 2
Preheat the oven to 180 degrees top/bottom heat (fan oven: 160 degrees). Line the wells of a muffin tray (12 wells) with muffin cases. Divide the dough into the muffin cases and bake in the preheated oven for approx. 25 minutes. Allow the muffins to cool completely after baking.

Step 3
For the frosting, roughly chop the white chocolate and melt it in a water bath. Allow the chocolate to cool until it is only slightly lukewarm (approx. 10-15 minutes). Stir frequently so that it does not become too solid. Allow the cream cheese and butter to come to room temperature, beat the butter for approx. 4 minutes until the mixture becomes creamy. Then add the cream cheese and mix well. Stir in the cooled but still liquid chocolate.

4th step
Fill the frosting into a piping bag with a star nozzle attachment and pipe a layer of cream onto each muffin. To decorate, either crumble a muffin and use it to decorate the remaining cupcakes or decorate the cupcakes with red sugar decorations.
