1/2 tsp black pepper
1/2 tsp paprika
1 tsp dried thyme or rosemary
1 tbsp fresh parsley (chopped, for garnish)
For the Roasted Potatoes:
4 medium Yukon gold potatoes (cubed)
2 tbsp olive oil
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/2 tsp paprika

🍽️ Directions:

1️⃣ Prepare the Roasted Potatoes:

Preheat oven to 400°F (200°C).
Toss potatoes with olive oil, salt, black pepper, garlic powder, paprika, and dried parsley.
Spread on a baking sheet and roast for 30-35 minutes, flipping halfway until golden and crispy.
2️⃣ Cook the Steak:

Pat steak dry and season with salt, black pepper, paprika, and dried thyme.
Heat olive oil in a pan over medium-high heat.
Sear the steak for 3-4 minutes per side (for medium-rare), adjusting time based on desired doneness.
Reduce heat, add butter and garlic, and baste the steak with the melted garlic butter for 1-2 minutes.
Remove steak from the pan and let it rest for 5 minutes before slicing.
3️⃣ Assemble & Serve:

Slice the steak against the grain and plate it with the roasted potatoes.
Drizzle with any remaining garlic butter from the pan and garnish with fresh parsley.
