Best Fluffy Pancakes

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 1/4 cups milk
  • 1 large egg
  • 3 tablespoons melted butter (plus more for cooking)
  • 1 teaspoon vanilla extract

Directions:

  1. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  2. In another bowl, whisk milk, egg, melted butter, and vanilla extract until combined.
  3. Pour the wet ingredients into the dry ingredients and gently mix until just combined (a few lumps are okay). Do not overmix!
  4. Heat a non-stick pan or griddle over medium heat and lightly grease with butter.
  5. Pour 1/4 cup of batter onto the pan for each pancake. Cook until bubbles form on the surface (about 2 minutes), then flip and cook for another 1-2 minutes until golden brown.
  6. Repeat with the remaining batter, greasing the pan as needed.
  7. Serve warm with syrup, fresh fruit, or your favorite toppings!
