Cabbage Soup with Ground Beef

This hearty Cabbage Soup with Ground Beef is perfect for chilly days, loaded with protein, vegetables, and fiber. It’s a nourishing, flavorful meal that’s sure to satisfy!

Ingredients
• 1 lb ground beef (or any ground meat of choice, such as chicken, turkey, or venison)
• 1 small green bell pepper, diced
• 1 small yellow onion, diced
• 2 carrots, sliced
• 2 celery stalks, sliced
• 2 tbsp garlic and herb seasoning
• 1 tsp Slap Ya Mama seasoning (or any Cajun seasoning; omit for less heat)
• 2 tbsp tomato paste
• 2 medium russet potatoes, peeled and diced
• 2 cans (14.5 oz each) diced tomatoes (I used Hunt’s with basil, garlic, and oregano)
• 4 garlic cloves, minced
• 1 head of green cabbage, chopped
• 1 heaping tbsp Knorr beef bouillon + 4 cups water (or 4 cups beef or chicken broth)
• Salt and pepper to taste

Instructions

  1. In a Dutch oven, heat over medium heat and brown the ground beef until fully cooked.
  2. Add the diced green pepper, yellow onion, carrots, and celery to the pot. Season with garlic and herb seasoning, Cajun seasoning, and black pepper. Sauté until the vegetables soften.
  3. Stir in the tomato paste and cook for a few minutes, stirring occasionally.
  4. Add the chopped russet potatoes and stir to combine.
  5. Pour in the diced tomatoes and add the minced garlic. Mix until well combined.
  6. Add the chopped cabbage. It might look like a lot, but it will reduce significantly as it cooks—stir in batches if needed.
  7. Stir in the Knorr beef bouillon and water (or broth). Bring to a boil, then lower the heat. Cover and simmer for about 30 minutes, or until the potatoes and cabbage are tender.
  8. Season with salt and pepper to taste. Serve hot and enjoy!
