Ingredients:
For the Crust:
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
For the Filling:
1 (14 oz) can sweetened condensed milk
1/2 cup fresh lemon juice
1 tsp vanilla extract
1 1/2 cups heavy cream, chilled
6-8 drops food coloring (red, orange, yellow, green, blue, purple)
For the Topping:
1/2 cup whipped cream
Rainbow sprinkles
Directions:

- Preheat oven to 350°F (175°C). Mix graham cracker crumbs, sugar, and melted butter. Press into a 9-inch pie dish. Bake for 10 mins. Let cool.
- In a bowl, whisk sweetened condensed milk, lemon juice, and vanilla until smooth.
- In a separate bowl, whip heavy cream until stiff peaks form. Gently fold into the condensed milk mixture.
- Divide the filling into 6 bowls. Add a few drops of food coloring to each bowl to create red, orange, yellow, green, blue, and purple layers.
- Spoon each colored layer into the crust, starting with purple and ending with red. Use a knife to gently swirl the colors.
- Chill for 4+ hours or until set. Top with whipped cream and rainbow sprinkles before serving.
