The Best Mediterranean Baked Fish 🐟
Ingredients:
1 pound (450g) boneless, skinless white fish (such as tilapia, cod, or halibut)
2 tbsp olive oil
1/2 tsp salt
1/4 tsp black pepper
1/4 cup chopped red onion
2 cloves garlic, minced
1/4 cup chopped parsley
2 Roma tomatoes, sliced
1 lemon, sliced

Instructions:
Preheat oven to 400°F (200°C).
Season the fish with salt and pepper.
Heat the olive oil in a large skillet over medium heat. Add the fish and cook for 2-3 minutes per side, or until golden brown.
Transfer the fish to a greased baking dish.
Scatter the red onion, garlic, parsley, tomatoes, and lemon slices over the fish.
Bake for 15-20 minutes, or until the fish is cooked through.
Serve immediately with your favorite sides.
