Ingredients

  • 1 pound lean ground beef
  • 1 cup diced apples (seeds and core removed)
  • 1 cup diced carrots

  • 1 teaspoon dried parsley (optional)
    Instructions
  1. In a large pot over medium heat, cook the ground beef until fully browned, breaking it into small pieces. Drain excess fat if needed.
  2. Add the diced apples, carrots, and sweet potatoes. Stir well.
  3. Pour in the beef broth or water, then cover and let simmer for 25-30 minutes until vegetables are tender.
  4. Add the green peas and cook for an additional 5 minutes.
  5. Remove from heat, let cool, and stir in dried parsley if using.
