Grilled Lamb Chops with Mashed Potatoes and Broccoli
Ingredients:
4 lamb chops
2 tablespoons olive oil
2 teaspoons dried rosemary
2 teaspoons garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
4 large potatoes, peeled and cubed
1/2 cup heavy cream
3 tablespoons butter
1 cup broccoli florets
1 lemon, sliced
Fresh herbs (optional), for garnish

Instructions:
Prepare the lamb chops: In a small bowl, mix olive oil, rosemary, garlic powder, salt, and black pepper. Rub this mixture generously over the lamb chops. Let the lamb chops marinate for at least 30 minutes to absorb the flavors.
Cook the mashed potatoes: In a large pot, bring the peeled and cubed potatoes to a boil in salted water. Cook for 10-12 minutes, or until the potatoes are fork-tender. Drain the potatoes and return them to the pot. Mash the potatoes with a potato masher or hand mixer, adding heavy cream and butter until smooth and creamy. Set aside and keep warm.
Grill the lamb chops: Preheat your grill or grill pan over medium-high heat. Grill the lamb chops for 4-5 minutes per side, or until they reach your desired level of doneness, with distinct grill marks. Squeeze lemon juice over the chops once they are done cooking.
Blanch the broccoli: While the lamb is grilling, steam or blanch the broccoli florets for 3-4 minutes until they are tender but still bright green. You can steam them or simply cook them in boiling water for a minute or so, then drain.
Assemble the dish: Place a generous portion of creamy mashed potatoes at the bottom of the container. Arrange the grilled lamb chops on top of the mashed potatoes, then scatter the broccoli florets around the edges. Garnish with a slice of lemon on top of the potatoes for an extra zesty touch.
