Bang Bang Chicken Skewers
Ingredients:
For the Chicken Skewers:
2 lbs (900g) boneless, skinless chicken breast or thighs, cut into 1-inch cubes
3 tbsp olive oil
1 ½ tbsp soy sauce
1 ½ tbsp honey
1 ½ tsp garlic powder
1 ½ tsp smoked paprika
¾ tsp salt
¾ tsp black pepper
Wooden skewers (soaked in water for 30 minutes)
For the Bang Bang Sauce:
¾ cup mayonnaise
3 tbsp sweet chili sauce
1 ½ tbsp Sriracha (adjust to taste)
1 ½ tbsp honey
1 ½ tsp lime juice


Directions:
Preheat your grill or grill pan to medium-high heat.
In a large bowl, combine the olive oil, soy sauce, honey, garlic powder, smoked paprika, salt, and black pepper. Add the chicken cubes and toss to coat evenly. Let marinate for at least 15 minutes.
Thread the marinated chicken cubes onto the soaked wooden skewers.
Grill the skewers for 6-8 minutes on each side, or until the chicken is cooked through and lightly charred.
While the chicken cooks, prepare the Bang Bang sauce by whisking together the mayonnaise, sweet chili sauce, Sriracha, honey, and lime juice in a small bowl until smooth and well-combined.
Once the chicken skewers are cooked, remove from the grill and brush with the Bang Bang sauce, or serve it as a dipping sauce on the side.
Garnish with chopped green onions or cilantro if desired and serve.
