Pepperoni Pizza Meatloaf Roll Recipe
Ingredients:
For the Meatloaf:
1 1/2 lbs ground beef or turkey
1 cup breadcrumbs
1/2 cup grated Parmesan cheese
1 egg
1/2 cup marinara or pizza sauce
1/2 tsp garlic powder
1 tsp dried oregano
1/2 tsp red pepper flakes (optional)
Salt and pepper, to taste
For the Filling:
1 cup shredded mozzarella cheese
1/2 cup diced bell peppers (optional)
1/4 cup sliced beef pepperoni
For the Topping:
1/2 cup marinara or pizza sauce
1/2 cup shredded mozzarella cheese
1/4 cup sliced beef pepperoni

Directions:
Prepare the Meatloaf Mixture:
Preheat your oven to 375°F (190°C).
In a large bowl, mix together all the meatloaf ingredients—ground meat, breadcrumbs, Parmesan cheese, egg, marinara or pizza sauce, garlic powder, oregano, red pepper flakes (optional), salt, and pepper—until just combined.
Roll Out the Meatloaf:
Place the meatloaf mixture on a large piece of parchment paper and flatten it into a rectangle about 1/2 inch thick.
Add the Filling:
Spread shredded mozzarella cheese, diced bell peppers (if using), and sliced pepperoni over the meatloaf, leaving a 1-inch border around the edges.
Roll the Meatloaf:
Using the parchment paper to help guide, carefully roll the meatloaf from one short end to the other into a tight log. Seal the edges and ends to prevent the filling from leaking out.
Bake the Meatloaf:
Place the rolled meatloaf seam-side down on a greased baking sheet or in a loaf pan. Bake for 35-40 minutes.
Top with Sauce and Cheese:
Remove the meatloaf from the oven. Spread marinara sauce over the top, sprinkle with shredded mozzarella cheese, and add pepperoni slices.
Finish Baking:
Return the meatloaf to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly and the internal temperature reaches 160°F (71°C).
Serve:
Let the meatloaf rest for 10 minutes before slicing. Serve with garlic bread or a side salad for a complete meal.
